A Stew Without Meat – Lentil & Root Vegetable Recipe

My other half is a vegetarian and apart from the odd cheeky burger or spag bol when eating out, this means I mostly eat a vegetarian diet. I don’t feel like I’m missing anything and actually find cooking more enjoyable these days with far more flavour options than just “meat”. One of the biggest struggles I have had though is missing out on those lovely warming meals that, as a meat eater, I associate with cold rainy winter nights – stews, roasts & hearty beef dishes! But I also want to eat the same meal as him in the evenings so I started experimenting with some hearty veggie stew recipes and after a couple of pretty shoddy attempts I think I’ve cracked it!

This is really easy to prepare and you can throw pretty much any veg you like in to the mix!

This really is a lovely dish and you can swap ingredients and spices around to add in your favorites. For additional heat I sometimes add a couple of chillies and if it can easily be turned into a lentil curry with some garam masala, fine beans and cauliflower.     Hi Kelly, I’m a vego and my partner eats meat but after six years together we’ve pretty much gone our separate ways in the kitchen. Good thing we have dual work benches!       haha! I think that crunch time may come for us too at some point! I’m enjoying it at the moment but there are definitely “morning afters” that I really feel I’m missing out on a bacon sarnie!!

      I have indeed just started! Trying to find my feet at the moment and am keeping it pretty open theme-wise! That could be a good or bad thing to be honest!

      Hey Fiona!!

      Yeah, Depending on how over-zealous I am with the curry powder and chilli, this sometimes comes out much more like dhal!! I leave it a little less time for stew consistency but I’m a big fan of lovely squishy lentils!! 🙂
